Butterscotch Apple Meringue Pie


  • 1 cup brown sugar
  • 1 cup water
  • 1 teaspoon grated lemon rind (zest)
  • 6 cups apples sliced for a pie
  • 3 tablespoons melted butter
  • ¼ cup all purpose flour
  • ¼ teaspoon salt
  • 1 recipe meringue


  1. In a medium sized saucepan bring water, zest and brown sugar to a boil.
  2. Add apples, cover the pot with a lid and cook slowly until tender, about 20 minutes.
  3. Every few minutes, gently turn the apples as they cook. When soft, drain the syrup from the apples into a bowl and reserve.
  4. In a second saucepan, blend together the butter, flour and salt.
  5. Add the reserved syrup and cook until thick, stirring constantly.
  6. Remove from heat and add the apple back into the hot syrup.
  7. Turn into a baked pie crust and spread meringue on top of the filling and brown in oven for 15 minutes.
  8. Cool to room temperature before service.
