Easy Cactus Salad
- 2 paddle cactus
- 1 roma tomato, diced
- 1/4 cup cilantro, rough chop
- 2 scallions, sliced
- 1 lime, juiced
- 1 serrano, chopped
- Remove thorns by scrapping opposite of where thorns are growing. Rinse and pat dry.
- Drizzle a tablespoon of olive oil and sprinkle salt and pepper. Grill for 2 minutes on each side on 400 temperature degree grill.
- Place the diced Roma tomato, chopped cilantro, sliced scallions, lime juice and chopped serrano on top of the grilled cactus.
