  • 2 chopped mangos
  • 1 red onion
  • 1 jalapeño
  • 2 tablespoons of lime juice
  • 2 tablespoons of cilantro
  • ¼ cup of finely chopped red bell pepper


  1. Mix ingredients in a bowl
  2. place on top of the roasted cauliflower and chickpeas as desired
  3. For the final touches, add the sliced jalapeño, avocado, and chopped cilantro, to taste

This mango salsa goes perfectly with our vegan cauliflower and chickpea tacos. It’s tasty, very healthy and a super versatile accompaniment for fish, shrimp, pork, chicken, fried eggs or plain old melty cheese.
