For this recipe you’ll want to use a Silicone Baking Mat – a nonstick, flexible mat that makes for a great surface to prepare dough and pastries. It replaces parchment paper and greasy sprays when used in the oven for baking, and dissipates heat rapidly to prevent burning of cookies or pastries.
We don’t have a favorite and they are available online or at your local super store.
- 2 cups of grated parmesan(fresh or bag)
- Heat oven to 425 degrees
- Spread grated parmesan into clumps about 1/4 inch thick on the pan/silpat
- Bake until until the clumps have melted and are just turning brown at the edges
- Remove from oven and, working quickly, shape as desired
