Tasty Meatloaf with Green and Red Jalapeño Peppers

Ingredients

  • 1 cup finely chopped onion
  • 1 carrot, finely chopped
  • 1 rib celery, finely chopped
  • 1 tablespoon minced garlic
  • 1 cup sliced raw mushrooms
  • 1 1/2 lb lean ground beef or ground turkey
  • 1/2 lb ground pork
  • 7 oz can of picked jalapeño peppers, drained
  • 2/3 cup of ketchup
  • 2 tablespoons of worcestershire sauce
  • 1 1/2 teaspoons ground black pepper
  • 1 1/2 teaspoons salt
  • 1/2 cup bread crumbs
  • 1 egg beaten
  • 1 pkg taco seasoning

Directions

  1. Preheat over to 350 degrees F
  2. Sautee onions, celery, carrots, garlic, mushrooms5 minutes until onions are translucent, then cover for 4 minutes until carrots are soft
  3. In a large mixing bowl combine ground beef, pork, egg, bread crumbs, spices, ketchup, drained jalapeño peppers, worcestershire sauce, sautéed vegetables
  4. Press into 8x4-inch loaf pan sprayed with cooking spray
  5. Bake 40 to 45 min. or until done (160ºF) Let stand 10 min. before slicing to serve
