Healthy and Easy Fresh Corn Chilled Salad


Ingredients

  • 1 red onion sliced thin and chopped
  • 1 green bell pepper chopped
  • 1 bunch of fresh cilantro chopped or basil
  • 1 bunch of fresh basil julienned or cilantro
  • 12 ears of corn 3 minutes
  • Ice bath
  • 1 lime cut into 4 wedges
  • 6 oz Cotija Cheese crumbled

Directions

  1. Slice thinly and chop red onion
  2. Chop bell pepper
  3. Chop cilantro with stemsplace ingredients into large bowl for mixing
  4. Crumble Cheese
  5. Grill corn for charred taste or Boil
  6. Bring extra large pot of water to boil
  7. Place shucked ears of corn into boiling water for 3 minutes
  8. Remove ears of corn and place in water bath for 10 minutes of cooling
  9. Cut the kernels off of the corn cob - see video Place all loose kernels in bowl with other ingredients and mix
  10. Combine all the ingredients and Citrus Lime Dressing
  11. Garnish with cilantro
  12. Chill and Serve

Easy and healthy salad you can make ahead and serve chilled.

Cook Time 3 minutes

Ice Bath 5 minutes

Assemble Time 10 minutes

Chill Time 90 minutes or serve as desired
