If you like avocados, chances are you’re a fan of guacamole. It’s the perfect accompaniment to chips, and a great topping on food. But, avocados are a really versatile fruit (yep, they are a fruit) and you can do many things with them.

So give the avocado it’s due, and don’t subject it to being the muse of one-food item. Check out these different incarnations; all the recipes can be found on our Avocado Ideas board on Pinterest.

Avocado toast has become the go-to food for many a healthy eater. This recipe crumbles tangy goat cheese on top of toast and smushed avocado, with chili pepper flakes sprinkled on top. This speaks to my soul.

Tuna salad

That’s right, tuna salad. It may sound weird, but avocados make tuna salad healthy and paleo friendly (if you’re a paleo person), by acting as a substitute for mayo. If you love both avocado and tuna as much as I do, then I guarantee you will like this version of tuna salad—even if it sounds like it’s a bit out there.

Avocado Eggs

Here’s a fun way to eat avocados for breakfast–you can bake an egg into them! All you have to do is slice open the avocado, scoop out the seed, crack an egg into the perfect pocket you’ve just created, and bake. And voila, avocado and egg for breakfast!

Avocado Pasta

How about pasta with avocado as the sauce? Pesto is green, so why use not avocado in a way that’s texturally more similar to an alfredo, so your pasta really feels like it has some body to it? It’s a simple recipe that uses lemon, garlic, and some basil. Sounds like a delicious and fresh take on avocado to me.

Avocado Lime Ice Cream

So, this may be the weirdest recipe to come up yet, but I’ve had avocado ice cream at an ice cream joint in Minneapolis called Izzy’s, and it was delicious. Also, this particular recipe adds some lime to give this cold treat some bite, and substitutes milk for coconut milk to cut some calories. Come on, be bold and give it a try!

Chocolate-Avocado Pudding

Yes, it keeps getting weirder. But this delicious take on avocados (appropriate as dessert or breakfast) is low sugar, and vegan friendly! It uses maple syrup, orange juice, and agave nectar to sweeten!

Avocado Soup with Chicken and Lime

I’m all about this soup recipe. Really, it’s a take on chicken tortilla soup, using avocado as a guest-starring ingredient. I think it should win one of those awards for the role.

Avocado Crab Crostini

These sound like the perfect little appetizers. If you’re a fan of crustaceans, then why not add avocado to these great little morsels. With Meyer lemon and shallots, it’s sure to be a nice light appetizer to please either you, or some guests.

Avocado Mac and Cheese

If you want to use any avocados you have lying around, and need something to make the kids happy, why not take a crack at this mac and cheese recipe that happens to add cubed avocados? I personally would make the avocados even more present, but it may make some kids avoid the dish. I remember seeing guacamole for the first time when I was five, and being weirded out by the bright green color, so take my suggestions with a grain of salt.

Fingerling Potatoes with Avocado and Smoked Salmon

I know there’s a good deal of seafood on this list, but I couldn’t resist this recipe. It spoke to my stomach–fingerling potatoes and smoked salmon are a gift from the gods. This snack is simple, and I’m thinking I’m gonna go try and make this ASAP–just for me.

I also have a love affair with eggs benedict–I can hardly resist trying different takes on this at any breakfast place I go. This time avocado is substituted as the hollandaise, which is mind-blowing. And actually, it’s much simpler than making an actual hollandaise sauce—you don’t have to make a makeshift double boiler (you know, in case you don’t happen to have one lying around the house). Try it today!

Mind you, this is only a smattering of what the internet has to offer, so don’t be afraid to search further!
